JuicePhone it is an app only for Mac OSX with which you can open a backup of iTunes and copy from it all the data you need without restoring the respective backup in the phone. From my point of view, this is a very good method to recover everything you had before the restore without having to restore the backup, because with its restoration you also restore the old settings as well as errors/incompatibilities/etc.
Via JuicePhone you can copy the notes from the backup, SMSphotos, applications, files downloaded through the application, in short almost everything you originally had saved on your phone. JuicePhone it is completely free but unfortunately it is only available for Mac OSX which is a big disadvantage because there are many more users of Windows than from Mac OSX, but we are waiting, maybe a version for Windows will appear soon.
